Persian Pomegranate Ice

Brewing instructions: 2 Tsp per person. Cover the leaves with hot water and brew for two minutes. Strain the leaves and top up with ice-cold water and iced cubes. You may also like to add some extra zest and increase the flavours by adding fresh mint leaves and a few red berries, not only does this boost taste but will make your iced tea look amazing.

The pomegranate in Iranian mythology was a symbol of authority over death and was known as the fruit from paradise (named four times in the Quran) therefore pomegranate trees would be planted around places of religious worship. Some Iranian Muslims believe that at least one of the fruit’s gem-like seeds has come from paradise and therefore no seed should fall to the ground.
The shape of these fruits was also added to the top of Persian warrior’s spearheads during the Achaemenid empire as the fruit was held so dear to the people of Iran, it was a great symbol of power. There are two types of pomegranates, the sweet, which has white skin, and the most popular, the sour and sweet which has red skin. They can be found in many Persian stews and salads and are made into very intense sauces. Iranians sometimes granulate the pomegranate and consume it with salt.
