Ceylon Black Iced Tea

Tea time: This tea is very versatile and can be enjoyed any time of the day.
Brewing time: Using two teaspoons firstly add a little hot water, covering the leaves. Let it brew for about 2 minutes then top up with cold water ice and any garnish.

Did you know? Iced tea during the 19th century wasn’t just the cold fruity tea we know today. Tradesmen found the ingenuity to ship ice to warmer climates so cold beverages could be enjoyed. Tea would be poured over ice and would also include spirits such as rum, brandy and champagne. Iced tea was a popular drink in the prohibition era. To quench a thirst at local bars and clubs without breaking the law iced tea was served with beautiful garnishes and the clinking of ice would be heard in glasses without the presents of alcohol.
The origin of the famous long island iced tea is one to be contested, a few claims have been made but all come to the same conclusion that it doesn’t actually contain iced tea. The mix is a blend of vodka, tequila, rum, triple sec and gin with a dash of coca cola to give it its black tea hue. What a concoction of spirits, no wonder a long island can be lethal on a night at the bar.
