Teatime: Papaya Is Ice tea is a great choice of tea to have early afternoon, especially on a hot summer’s day to cool down the senses and enjoy the summer’s sun.

Brewing instructions: 2 Tsp of tea per person, cover leaves with hot water and top up with cold water and ice.

Infusion time: Papaya Is Ice iced tea will need 8-10 minutes to infuse. You may also like to add additional fruit to garnish and a drop of honey to really sweeten the deal.

Papaya also known as a pawpaw to some was nicknamed by Christopher Columbus as the “fruit of the angels”. Deceivingly these plump, tropical fruits are actually, botanically speaking, a berry. Looking like an exotic pear growing on a large tree are essentially berries growing on a large stalked herb. The black seeds in the centre of this delicious fruit can also be eaten and have a spicy, pepper-like flavour to them. Not only can these unusual fruits give a fruit salad some extra pizzazz, but the pulp of these large berries can be used as a meat tenderiser. The flesh of papaya contains an enzyme called papain. A paste of very unripe papaya can break down the meat’s fibres and stop it from becoming so tough when cooked.
