Mortar and pestles date back as far as 35000 BC in southwest Asia. Made from more accessible materials such as stone and clay. They were also described in ancient Egyptian papyrus dating back even further to 1550 BC. Just as we use them today, they would also be used to grind spices, grains and even some plants to be used in cooking and medicines.

Mortars can be made of many materials, each material has its advantages as wood and ceramic are great for grinding garlic, nuts and other herbs to make things such as pesto or picadas. Stone mortars are great to grind tougher and larger ingredients and don’t absorb any odours. Brass mortars are used mostly hard spices and herbs to help release fragrance and flavour to your cooking, the metal helps in better coarse grinding.

Directions:

To use your mortar and pestle add to the mortar any ingredients you wish to grind, preferably herbs and spices and using the pestle push down and mix against the mortar you should see, after a while of grinding, your ingredients will start to form a fine powder. Use for dry or wet ingredients, cleaning in-between.

Cleaning:

To keep your mortar and pestle looking its best we recommend using the dry-cleaning method. After each use add a little dry rice to the mortar and grind. After dusting out the powder, this will dry up any oils and absorb odours. However, you can also give your mortar an extra shine by using the traditional method with a mix of half a cup of vinegar, a teaspoon of salt and flour to make a paste.

Spread the paste over the brass and leave to sit for a few minutes. Rinse off with some cool water, dry and buff with a cloth. Sparkling!
